Blueberry Muffins

Ingredients

all-purpose flour
sifted
1/4
cup
sugar plus more for topping
2 1/2
tsp
baking powder

egg
well beaten
3/4
cup
milk
1/3
cup
cooking oil or melted shortening
1
cup
blueberries
fresh or frozen thawed and well-drained
melted butter for topping
Instructions
Preheat oven to 400
o
. Grease muffin pans.
Toss blueberries with 2 Tbs sugar
Sift flour, sugar, baking powder and salt into a bowl.
Make a well in the center of the dry ingredients.
Combine egg, milk and oil. Add all at once to dry ingredients.
Stir quickly just until the dry ingredients are moistened.
Gently stir blueberries into the batter.
Fill greased muffin pans 2/3 full.
Bake at 400o for about 25 minutes.
While still warm, dip tops in melted butter then granulated sugar.
