Pecan Pie Surprise

Ingredients

  • 1 package pillsbury butter or yellow cake mix 18 1/2 oz
  • 1/2 cup butter or margarine melted
  • 1 egg
  • 1 cup chopped pecans

Filling

  • 2/3 cup reserved cake mix
  • 1/2 cup firmly packed brown sugar
  • 1 1/2 cups dark corn syrup
  • 1 tsp vanilla
  • 3 eggs

Instructions

  • Preheat oven 350o
  • Generously grease bottom and sides of 13x9 inch baking pan. 
  • Reserve 2/3 cup dry cake mix for filling.
  • In large mixing bowl, combine remaining dry cake mix, butter and 1 egg. Mix until crumbly, press in prepared pan.
  • Bake in preheated oven for 15-20 minutes until light golden brown. 

Filling

  • Meanwhile, in large mixer bowl combine all ingredients. Beat at medium speed 1 - 2 minutes.
  • Pour filling over partially baked crust. Sprinkle with pecans. Return to oven and bake for 30-35 minutes until filling is set.
  • Cool and cut into bars.
