Pecan Pie Surprise
Ingredients
- 1 package pillsbury butter or yellow cake mix 18 1/2 oz
- 1/2 cup butter or margarine melted
- 1 egg
- 1 cup chopped pecans
Filling
- 2/3 cup reserved cake mix
- 1/2 cup firmly packed brown sugar
- 1 1/2 cups dark corn syrup
- 1 tsp vanilla
- 3 eggs
Instructions
- Preheat oven 350o.
- Generously grease bottom and sides of 13x9 inch baking pan.
- Reserve 2/3 cup dry cake mix for filling.
- In large mixing bowl, combine remaining dry cake mix, butter and 1 egg. Mix until crumbly, press in prepared pan.
- Bake in preheated oven for 15-20 minutes until light golden brown.
Filling
- Meanwhile, in large mixer bowl combine all ingredients. Beat at medium speed 1 - 2 minutes.
- Pour filling over partially baked crust. Sprinkle with pecans. Return to oven and bake for 30-35 minutes until filling is set.
- Cool and cut into bars.
