Grandma's Gefilte Fish

Ingredients

  • 6 lbs fish - pike, perch, whitefish, mullet

Stock

  • Fish Bones
  • 3 carrots
  • 3 celery tops
  • 3 small onions
  • 1 tbs salt
  • 3/4 tsp pepper

Ground Fish Mixture

  • 2 carrots
  • 3 small to medium onions
  • 3 celery bottoms

Binder

  • 5 eggs
  • 1 2/3 tbs salt
  • 1/2 tsp pepper
  • 1/2 cup matzoh meal
  • 1/2 cup water
  • 1 1/3 tbs sugar

Instructions

  • Clean and fillet fish, saving the bones.  Have fishmonger prepare fish.

Stock

  • Boil bones in about 2 quarts water and then strain.
  • Make stock by adding stock ingredients.

Grind

  • Grind raw fish together with Ground Fish Mixture ingredients.

Form

  • Mix together ground vegetables and fish with Binder ingredients.
  • Form into balls.
  • Drop into broth and simmer for 1 1/2 hours.
  • Lay roe on top.
