Lemon Bars Deluxe

Ingredients
Crust
- 2 cups all purpose flour sifted
- 1/2 cup confectioners sugar sifted
- 1 cup butter or margarine slightly softened
Topping
- 4 eggs
- 2 cups granulated sugar
- 1/3 cup lemon juice
- 1/4 cup all purpose flour
- 1/2 tsp baking powder
Instructions
Crust
- Sift together 2 cups flour and confectioners sugar.
- Cut in butter until mixture clings together.
- Press into a 13x9x2 inch baking pan.
- Bake at 350o about 20 to 25 minutes, until lightly browned.
Filling
- Put eggs, sugar, lemon juice in blender and blend until thick and smooth.
- Sift 1/4 cup flour and baking powder and add to blender. Blend to combine.
- Pour over crust.
- Bake at 350o for 25 minutes.
- Sprinkle with confectioners sugar.
- Cool.
- Cut in bars.
- Makes 36 bars.
