Lemon Bars Deluxe

Ingredients

Crust

  • 2 cups all purpose flour sifted
  • 1/2 cup confectioners sugar sifted
  • 1 cup butter or margarine slightly softened

Topping

  • 4 eggs
  • 2 cups granulated sugar
  • 1/3 cup lemon juice
  • 1/4 cup all purpose flour
  • 1/2 tsp baking powder

Instructions

Crust

  • Sift together 2 cups flour and confectioners sugar.
  • Cut in butter until mixture clings together.
  • Press into a 13x9x2 inch baking pan.
  • Bake at 350o about 20 to 25 minutes, until lightly browned. 

Filling

  • Put eggs, sugar, lemon juice in blender and blend until thick and smooth.
  • Sift 1/4 cup flour and baking powder and add to blender.  Blend to combine.
  • Pour over crust.
  • Bake at 350o for 25 minutes. 
  • Sprinkle with confectioners sugar.
  • Cool.
  • Cut in bars.
  • Makes 36 bars.
