Chocolate Mousse
Ingredients
Crust
- 12 oz chocolate wafers
- 1 stick margarine + 2 tbs
Filling
- 8 oz semi-sweet chocolate
- 1/4 cup boiling water
- 1/2 cup sugar
- 4 egg yolks
- 1/2 cup Tia Maria liqueur
- 4 egg whites
- 1/4 tsp cream of tartar optional
- 2 cups heavy cream
Instructions
Crust
- Crush wafers in a blender or food processor.
- Add melted margarine and mix until crumbly.
- Pat into a springform pan extending crust about 1 inch up on sides.
Filling
- Melt chocolate with 1/4 cup sugar and boiling water on top of double boiler.
- Remove from heat. Cool.
- Beat in egg yolks.
- Return to cook over hot water for 1 minute.
- Add liqueur. Blend.
- Set aside to cool.
- Beat egg whites with cream of tartar until stiff.
- Gradually add remaining 1/4 cup sugar. Beat until stiff.
- Fold egg white mixture into chocolate.
- Whip cream and fold into mixture.
- Blend well.
- Pour filling into crust.
- Decorate with chocolate shavings.
