Chocolate Mousse

Ingredients

Crust

  • 12 oz chocolate wafers
  • 1 stick margarine + 2 tbs

Filling

  • 8 oz semi-sweet chocolate
  • 1/4 cup boiling water
  • 1/2 cup sugar
  • 4 egg yolks
  • 1/2 cup Tia Maria liqueur
  • 4 egg whites
  • 1/4 tsp cream of tartar optional
  • 2 cups heavy cream

Instructions

Crust

  • Crush wafers in a blender or food processor.  
  • Add melted margarine and mix until crumbly.
  • Pat into a springform pan extending crust about 1 inch up on sides. 

Filling

  • Melt chocolate with 1/4 cup sugar and boiling water on top of double boiler.
  • Remove from heat.  Cool.
  • Beat in egg yolks.
  • Return to cook over hot water for 1 minute.
  • Add liqueur.  Blend.
  • Set aside to cool.
  • Beat egg whites with cream of tartar until stiff.
  • Gradually add remaining 1/4 cup sugar.  Beat until stiff.
  • Fold egg white mixture into chocolate.
  • Whip cream and fold into mixture.
  • Blend well.
  • Pour filling into crust.
  • Decorate with chocolate shavings.
