Bubbe's Mandelbrot

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1 cup Wesson butter oil
  • 3 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 cup nuts OR
  • 1 cup chocolate chips

Instructions

  • Beat eggs, sugar and oil.
  • Fold in remaining ingredients.
  • Form into three loaves.  Use metal ice cube trays for baking pans.
  • Bake at 350o for 20 minutes.
  • Remove from oven. Close oven door to hold heat.
  • Slice warm.  Move some slices to a 4th tray to allow for air circulation around the pieces.  
  • Dry in oven. 
    Store in Ziploc bags in the freezer.  

Notes

10/27/17 Made with Pillsbury Gluten Free All Purpose Flour.  Looks right but crumbly and grainy texture.
