Blueberry Tart (Emilie)

Ingredients

Crust

  • 1 cup flour
  • pinch salt
  • 2 tbs sugar
  • 1/4 cup salted butter
  • 1 tbs vinegar scant

Filling

  • 2/3 cup sugar
  • 2 tbs flour
  • dash cinnamon
  • 3 cups blueberries dry as possible

Instructions

  • Make the crust by working the butter in with the flour, salt and sugar.  Add the vinegar.
  • For the filling combine the cinnamon with the sugar and flour.  Add the blueberries.
  • Put crust in quiche pan.  Top with filling.
  • Bake at 400o for 1 hour.  
  • Remove from oven .
  • Top with 1 cup fresh blueberries.
  • Cool.
  • Dust with confectioner's sugar.

Buy 2 pints blueberries.
