Beef Stew

Ingredients

  • 2 tbs all-purpose flour
  • 1 1/2 tsp salt
  • 1 1/2 lbs beef chuck cut in 1-inch cubes
  • 2 tbs shortening
  • 2 cans condensed tomato soup 10 1/2 oz each
  • 1 1/2 cups onion chopped
  • 1/2 tsp dried basil crushed
  • 4 medium potatoes pared and cubed
  • 4 medium carrots cut in 1-inch pieces
  • 1/2 cup dry red wine or water

Instructions

  • Combine flour, salt, and dash pepper.
  • Coat meat cubes in seasoned flour.
  • Add soup, 2 1/2 cups water, onion, and basil.
  • Cover and bake in 375o oven about 1 hour.
  • Add potatoes, carrots, and wine.
  • If the gravy needs thickening, combine 1 to 2 tbs. flour with water to form a thick paste and add to stew.
  • Cover and bake 1 hour longer or until tender.
  • Makes 4 to 6 servings.
