Pickled Beets

Ingredients

  • 1 tbs whole mixed pickling spice
  • 3/4 cup white vinegar
  • 2 cans sliced beets
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1 medium white onion sliced

Instructions

  • Put on an apron or wear old clothes.  Watch for beet stains.
  • Boil spices (in a spice ball or tea caddy) with vinegar and beet juice for 10 minutes.  Add sugar and salt.  
  • Put beets and onions in jar.
  • Pour juice in jar.
  • Refrigerate at least 24 hours before serving.
