Russian Tea Biscuits

Ingredients

Dough

  • 4 1/2 cups unsifted flour
  • 1 tbs baking powder
  • 1/2 tsp salt
  • 3/4 cup granulated suger
  • 1/2 cup oil
  • 1/4 cup orange juice
  • 1 tsp grated orange rind
  • 4 eggs reserve 1 egg white for topping
  • 1 tsp vanilla extract

Filling

  • 1 to 1/2 cup chopped nuts
  • 1 1/2 cup raisins
  • 1 tsp cinnamon
  • 1/4 cup granulated sugar
  • any flavor jam or jelly

Topping

  • 1 reserved egg white
  • 1/4 cup granulated sugar
  • 1 tsp cinnamon

Instructions

  • Sift flour, baking powder, salt, and sugar into a large bowl.
  • Make a well in the center and add oil, margarine, orange juice and rind, eggs (except for 1 reserved egg white), and vanilla.
  • Knead dough.
  • Chill for 2 hours.
  • Cut dough in 4 parts.
  • Roll 1 part on a floured board.  Spread with jam and sprinkle with nuts, raisins, and sugar-cinnamon mixture.  Roll as for a jelly roll.  Brush top with egg white and sprinkle with combined sugar and cinnamon.  Slice into 1 1/2 inch slices and place on a lightly greased baking sheet with topping side up.
  • Repeat with 3 remaining pieces of dough.
  • Bake in a 350o oven for 25 minutes.
  • Remove from baking sheet and coool on a rack.
  • Makes about 3 1/2 dozen biscuits.
