Russian Tea Biscuits
Ingredients
Dough
- 4 1/2 cups unsifted flour
- 1 tbs baking powder
- 1/2 tsp salt
- 3/4 cup granulated suger
- 1/2 cup oil
- 1/4 cup orange juice
- 1 tsp grated orange rind
- 4 eggs reserve 1 egg white for topping
- 1 tsp vanilla extract
Filling
- 1 to 1/2 cup chopped nuts
- 1 1/2 cup raisins
- 1 tsp cinnamon
- 1/4 cup granulated sugar
- any flavor jam or jelly
Topping
- 1 reserved egg white
- 1/4 cup granulated sugar
- 1 tsp cinnamon
Instructions
- Sift flour, baking powder, salt, and sugar into a large bowl.
- Make a well in the center and add oil, margarine, orange juice and rind, eggs (except for 1 reserved egg white), and vanilla.
- Knead dough.
- Chill for 2 hours.
- Cut dough in 4 parts.
- Roll 1 part on a floured board. Spread with jam and sprinkle with nuts, raisins, and sugar-cinnamon mixture. Roll as for a jelly roll. Brush top with egg white and sprinkle with combined sugar and cinnamon. Slice into 1 1/2 inch slices and place on a lightly greased baking sheet with topping side up.
- Repeat with 3 remaining pieces of dough.
- Bake in a 350o oven for 25 minutes.
- Remove from baking sheet and coool on a rack.
- Makes about 3 1/2 dozen biscuits.
