Blueberry Muffins

Ingredients

  • 1 3/4 cup all-purpose flour sifted
  • 1/4 cup sugar plus more for topping
  • 2 1/2 tsp baking powder
  • 1 egg well beaten
  • 3/4 cup milk
  • 1/3 cup cooking oil or melted shortening
  • 1 cup blueberries fresh or frozen thawed and well-drained
  • melted butter for topping

Instructions

  • Preheat oven to 400o. Grease muffin pans.
  • Toss blueberries with 2 Tbs sugar
  • Sift flour, sugar, baking powder and salt into a bowl.
  • Make a well in the center of the dry ingredients.
  • Combine egg, milk and oil. Add all at once to dry ingredients.
  • Stir quickly just until the dry ingredients are moistened.
  • Gently stir blueberries into the batter.
  • Fill greased muffin pans 2/3 full.
  • Bake at 400o for about 25 minutes.
  • While still warm, dip tops in melted butter then granulated sugar.
