Blueberry Muffins
Ingredients
- 1 3/4 cup all-purpose flour sifted
- 1/4 cup sugar plus more for topping
- 2 1/2 tsp baking powder
- 1 egg well beaten
- 3/4 cup milk
- 1/3 cup cooking oil or melted shortening
- 1 cup blueberries fresh or frozen thawed and well-drained
- melted butter for topping
Instructions
- Preheat oven to 400o. Grease muffin pans.
- Toss blueberries with 2 Tbs sugar
- Sift flour, sugar, baking powder and salt into a bowl.
- Make a well in the center of the dry ingredients.
- Combine egg, milk and oil. Add all at once to dry ingredients.
- Stir quickly just until the dry ingredients are moistened.
- Gently stir blueberries into the batter.
- Fill greased muffin pans 2/3 full.
- Bake at 400o for about 25 minutes.
- While still warm, dip tops in melted butter then granulated sugar.
