Blintzes
Ingredients
Blintz Skins
- 1 cup all purpose flour sifted
- 1/2 tsp salt
- 4 eggs well beaten
- 1 cup milk or water
Blintz Filling
- 1 lb dry cottage cheese
- 1 egg
- 1/4 tsp salt
- 1/2 cup sugar scant
- a little vanilla
Another Cheese Filling
- 1 1/2 lbs dry cottage cheese
- 1 or 2 egg yolks beaten
- 1 tbs melted butter
- to taste salt
- to taste sugar
- to taste cinnamon
- vanilla
Instructions
Blintz Skins
- Sift flour and salt.
- Mix liquids.
- Stir in flour mix until smooth. Thin, if necessary.
- Make skins (about 10) in crepe pan. Brown one side only.
- turn out onto towel to cool. Stack when cooled.
Blintz Filling
- Mash together filling ingredients.
- Place about 2 tbs filling on browned side of skins and roll.
- Blintzes may be frozen before frying.
- When ready to serve, fry in butter until browned.
